Forty-five compounds were characterized, representing 92.7 % of the total components detected, and elemicin (27.8%), apiole (26.2%), n-octanol (4.9%), alpha-zingiberene (3.9%), octyl acetate (3.8%), and (E)-gamma bisabolene (3.1%) were identified as predominant components. In addition, in this study, the essential oil was tested for its antimicrobial activity against 23 different food-borne microorganisms, including 20 bacteria, 1 fungus, and 2 yeast species. The essential oil of Heracleum antasiaticum exhibited considerable inhibitory effects against all bacteria, fungi, and yeast species tested.</dc:description><dc:publisher>SELCUK UNIV PRESS</dc:publisher><dc:date>2025</dc:date><dc:type>Article</dc:type><dc:identifier>https://rdlopen.rawdatalibrary.net/r/ebyu/16849</dc:identifier><dc:identifier>https://doi.org/10.15316/selcukjafsci.1683861</dc:identifier><dc:language>en</dc:language><dc:relation>SELCUK JOURNAL OF AGRICULTURE AND FOOD SCIENCES</dc:relation><dc:rights>info:eu-repo/semantics/openAccess</dc:rights><dc:type>info:eu-repo/semantics/article</dc:type><dc:identifier>https://ebyu-rdlopen.rawdatalibrary.net/tr/items/ebyu/16849</dc:identifier></oai_dc:dc></metadata></record></GetRecord></OAI-PMH>
