Evaluation of energy and nutrient content of fruit juices and similar beverages in Türkiye and their investigation in terms of sustainability

Özenir, Çiler; Kaçar, Mihrican; Berk, Gizem; Kayhan, Beyza

This study aims to evaluate the contents of fruit juices and similar beverages in the Turkish market and to examine them in line with the Sustainable Development Goals. Within the scope of the study, the researchers examined the label information of 187 fruit juices and similar beverages from 26 different brands in four different product types. It was determined that all fruit nectars (100%) and almost all fruit and flavored beverages contain added sugar (92.8% for fruit beverages and 70.0% for flavored beverages). It was further detected that 17.5% of fruit nectars and 20.3% of fruit beverages contain sweeteners. Moreover, more than 100% of the daily sodium requirement is met by consuming 100 ml of fruit juice, nectar, or beverages. It was determined that orange and apple juices, apricot, peach, and cherry fruit nectars, and peach, sour cherry, and orange fruit beverages contain more sugar than freshly squeezed fruit juices (p<0.05). The high-fructose syrup manufacturing industry produces large volumes of waste liquid containing various waste carbohydrates, which has a significant environmental impact. Greenhouse gas emission sources are also released to the environment in sugar production processes. On the other hand, it was determined that most of the products examined were packaged in Tetra Pak® packaging. More sustainable product supply chains are those that optimize the use of materials, water, and energy throughout their lifecycle while minimizing waste from products and used packaging. In light of the data obtained from this study, it would be useful for the fruit juice industry to make regulations to ensure sustainable production and consumption patterns in order to ensure a healthy and quality life at all ages.

Prunus mahaleb L. seeds are widely used in the baking industry as spice for flavouring. While achieving the mahaleb powder for commercial use in local companies, the seeds are sometimes mixed unintentionally with their kernels (stony shell) during sieving procedure. As the chemical and biological properties of the kernel of seeds are not well known, the kernel, seeds and the market sample obtained from a local supplier are decided to investigate individually. The antioxidant capacity and the trace element analyses of the seeds and kernels were performed by TEAC and CUPRAC assays and ICP-MS. The market sample was analysed for nutrient and oil composition. Fatty acid composition of the oil was determined with GC-FID and GC-MS methods. The chemical composition of the methanol extract of the seeds and kernels was studied by LC-MS/MS. Trace elements Mn, Co, Ni, Cu, Zn and Se were determined in the methanol extracts, ethyl acetate and water fractions. Mushroom tyrosinase enzyme inhibitions of 33 different extracts and fractions of various waste parts of the plant (kernel, fruit, twigs, flos, leaves) were investigated. The nutritional values showed that the market sample had high nutritious properties. The fatty acid content of the oil was found to be valuable in remedying dysfunctions of the body. Kernel ethylacetate fraction showed the highest tyrosinase enzyme inhibition. The role of copper element on enzyme activity was determined. The kernels are accepted as a waste material may also be evaluated as a good promising choice for food, cosmetic and drug industry.

Is export quality a viable option for sustainable development paths of Asian countries?

Manga, Muge; Cengiz, Orhan; Destek, Mehmet Akif

This paper investigates the role of export quality in climate action goal of the sustainable development goals in emerging Asian countries. For this purpose, the empirical model that observes the impact of real GDP, energy use and export quality index on carbon emissions is constructed and is analyzed by ARDL bounds testing approach for the period from 1970 to 2014. We also include the square of real GDP as independent variable to observe the existence of environmental Kuznets curve (EKC) hypothesis which implies the parabolic relationship between economic growth and environmental degradation. The findings show that increase in export quality leads to a fall in CO2 emissions for China and India. In contrast, the effect of increasing export quality increases CO2 emissions in Thailand and the Philippines. Lastly, our asymmetric causality results show that the positive shocks of export quality causes positive shocks of CO2 emissions in Thailand and Indonesia. Furthermore, we found that positive export quality shocks cause negative CO2 emissions shocks in India while negative export quality shocks cause positive CO2 emissions shocks in China. We also confirm the inverted U-shaped EKC hypothesis in China and Thailand.

Which barriers need more attention in food waste management and blockchain integration?

    Aka, Salih

Blockchain is a digital innovative technology that is decentralized, open to the use of all stakeholders, does not allow data manipulation, and has many more features. Blockchain, which has the potential to solve problems in food safety, is attracting more and more attention from researchers in this field. In this study, a conceptual model for the integration of blockchain and food waste management is proposed. The combination of blockchain and food waste management has economic, social, and environmental dimensions that will serve the purpose of reducing food waste. However, some blockchain barriers make it difficult to integrate with food waste management. Blockchain barriers that affect the success of this integration are examined with the BEST-Worst Method (BWM). As a result of the analysis, infrastructure setup and adaptation challenges stand out as the most important barrier. The study would be a starting point for practitioners working on food waste management and the blockchain system, and government officials planning regulations in this area.

Using Grapefruit and Tomato Waste in O/W Type Chicken Meat Emulsion

    Akşit, Zeynep; Gençcelep, Hüseyin

Utilizing food waste is crucial for several reasons, including preserving valuable ingredients, lowering formulation costs, taking advantage of its functional properties, and preserving the environment. Grapefruit waste (GW) and Tomato waste (TW) are used in oil-in-water (O/W) emulsion formulation to investigate their contributions to emulsion stability, textural parameters, and steady shear rheological properties of the model system. O/W emulsions were formed with four different concentrations (0.5%, 1%, 2%, and 3%) of GW and TW, and chicken breast meat and corn oil were the main components of emulsions. Both food wastes increased emulsion stability (ES) in most concentrations compared to the control. The best ES of 86.35 was observed at a concentration of 1% TW emulsion. Emulsions were subjected to texture profile analysis as both row and heat-treated. Heat-treated emulsions had higher hardness values (241.2-518.6 g) than the row emulsions (149.7-247.2 g). All emulsions were found to have pseudoplastic character and exhibit shear thinning behavior. All emulsion samples' apparent viscosity fit well with the Ostwald-de-Waele model (R2>0.9). Food waste samples used in the study improved the chicken-type O/W emulsion properties in terms of emulsion stability and textural properties.

Demir, Abdussamed Yasin; Karadayi, Mehmet; Isaoglu, Mine; Karadayi, Gokce; Gulluce, Medine

There are various studies on the toxicological potentials of conventionally synthesized zinc oxide (ZnO) nanoparticles, which are useful tools for many medical applications. However, knowledge about the biologically synthesized ones is still limited. In this study, the potential of producing ZnO nanoparticles via a green synthesis method, which enables safer, environmentally, economical and controlled production by using the Symphoricarpos albus L. plant, was investigated. For this purpose, aqueous extract was obtained from the fruits of the plant and reacted with zinc nitrate precursor. Characterization of the synthesized product was carried out by SEM and EDAX analyzes. In addition, the biosafety of the product was also investigated by using the Ames/Salmonella, E. coli WP2, Yeast DEL, seed germination, and RAPD test systems. The results obtained from SEM studies showed that spherical nanoparticles with an average diameter of 30 nm were synthesized as a result of the reaction. EDAX findings confirmed that these nanoparticles were composed of Zn and O elements. On the other hand, according to the findings of the biocompatibility tests, the synthesized nanoparticle did not show any toxic and genotoxic effects up to a concentration of 640 μg/ml in any of the test systems. Accordingly, considering the findings of our study, it was concluded that the aqueous extract of S. albus fruits can be used for the green synthesis of ZnO nanoparticles, the products obtained successfully passed the biocompatibility tests in our study, and additionally, more comprehensive biocompatibility tests should be performed before industrial scale production.

Mechanical, durability and microstructural characteristics of Portland pozzolan cement (PPC) produced with high volume pumice: Green, cleaner and sustainable cement development

Ulusu, Hayati; Yılmaz Aruntaş, Hüseyin; Burcu Gültekin, Arzuhan; Dayı, Mustafa; Çavuş, Murat; Kaplan, Gokhan

Nowadays, it is frequently preferred to use pozzolans instead of clinker to reduce the CO2 emissions that increase with cement production. Because in the future, the release of artificial pozzolans, such as fly ash and blast furnace slag, will decrease. Therefore, the demand for natural pozzolanic cement will increase. This study aimed to produce Portland Pozzolan Cement (PPC) by using pumice instead of clinker up to 40%. The Chemical, physical, mechanical, durability, microstructure, and carbon footprint characteristics of PPCs were investigated experimentally. As the pumice volume in the PPCs increased, the CaO/SiO2 ratio and specific gravity decreased. Due to the hygroscopic moisture of the pumice, its grindability has become difficult. While the 40 µm sieve residue of PPCs ranges from 0.8 to 1.7%, the sieve residue ratio generally increases as the pumice volume increases. The porous structure of pumice led to an increase in Blaine fineness as the replacement ratio increased. The Blaine fineness of PPCs containing 40% pumice rose by about 20% more than the reference cement. The consistency water of PCs varies between 29 and 36%. As the water consistency increased, the setting time of the pastes was prolonged. Initial setting times of PPCs are between 150 and 220 min. If the CaO/SiO2 ratio decreased with the pumice volume, the compression strength of the mortars decreased. While the 28-day compression strength of PPC containing 10% pumice was measured as 36.2 MPa, this value was measured as 21.6 MPa for PPC containing 40% pumice. As the pumice volume increased, the mortars' drying shrinkage and sulfate-induced expansion values decreased significantly. According to the sustainability analysis, the CO2 emissions of cement vary between 518 and 880 kg CO2/t. By using pumice instead of clinker, CO2 emissions of cement can be reduced. In SEM examinations, it was determined that pumice concentrated the microstructure. As a result, it has been determined that eco-friendly cement can be obtained by using 10% and 20% pumice in PPC production.

Classification of waste materials with a smart garbage system for sustainable development: a novel model

    Kaya, Volkan

In today’s conditions, where the human population is increasing, environmental pollution is also increasing around the world. One of the most important causes of environmental pollution is the waste materials in the garbage. Misuse of waste materials causes significant damage to both the environment and human health. With the developing technology, the recyclability of the raw material used in the production of waste materials significantly affects both the raw material needs of the countries and the energy savings. Therefore, many traditional activities are carried out in recycling facilities in order to reuse the waste materials that can be recycled in many countries. At the beginning of these activities is manual waste collection and pre-processing depending on the human workforce. This process poses a serious threat to both the environment and human health. For this reason, there is a need for a smart system that automatically detects and classifies the waste materials in the garbage. In this study, Xception, InceptionResNetV2, MobileNet, DenseNet121 and EfficientNetV2S deep learning methods based on artificial intelligence, which automatically classify the waste materials in the garbage, were used and in addition to these methods, Xception_CutLayer and InceptionResNetV2_CutLayer based on transfer learning techniques were proposed. The proposed methods and artificial intelligence-based deep learning methods were trained and tested with a dataset containing 6 different waste materials. According to the findings obtained as a result of training and testing, a classification success rate of 89.72% with the proposed Xception_CutLayer method and 85.77% with the InceptionResNetV2_CutLayer method, a better success rate was obtained than the other artificial intelligence-based methods discussed in the study.

Investigation of Physical and Chemical Properties of Bitumen Modified with Waste Vegetable Oil and Waste Agricultural Ash for Use in Flexible Pavements

Çolak, Muhammed Ali; Zorlu, Elif; Çodur, Muhammed Yasin; Baş, Fatih İrfan; Yalçın, Özgen; Kuşkapan, Emre

The rapid growth of the world population and the rapid diversification of consumption habits due to technological advancements have increased waste production. An investigation of the effects of biomass products, such as waste vegetable oil and waste agricultural ash, on bitumen’s physical and chemical properties was conducted in this study. By recycling biomass products, this study aimed to improve the performance and stability of bituminous hot mixtures, optimize the number of additives, and create more economical designs. Using the Taguchi method, 0%, 2%, 4% by weight of waste vegetable oil and 0%, 3%, and 6% by weight of waste agricultural ash were added to 70/100 penetration pure bitumen with an orthogonal array of L9. For 10, 20, and 30 min, modified bitumen samples were prepared at 170 °C, 180 °C, and 190 °C with a constant mixing speed of 3000 RPM. The samples were tested for penetration, softening point, flash point, rolling thin film oven (RTFOT), FTIR, and Marshall Design stability and flow. Based on the obtained performance statistics, 95% confidence levels were assigned to the predictions. The stability and softening point values decreased as the oil content increased, while flash and penetration values increased. With increasing ash content, stability, flash, and softening point values increased, and penetration values decreased. Compared to oil and ash additives, mixing temperature and time had relatively little effect on the modification process. Overall, the optimum parameter levels were 4% for oil, 0% for ash, 170 °C for temperature, and 10 min for time.

Removal of Cr6+ ions and mordant violet 40 dye from liquid media using Pterocladia capillacea red algae derived activated carbon-iron oxides

Mohamed, Soha Mahrous Ismail; Güner, Eda Keleş; Yılmaz, Murat; El Nemr, Ahmed

In recent years, water pollution has become one of the most dangerous problems facing the world. Pollution of water with heavy metals and different dyes has caused many harmful effects on human health, living organisms and our environment. In this study, iron oxide nanomagnetic composite from Pterocladia Capillacea red algae-derived activated carbon (PCAC-IO) was synthesized by co-precipitation method using different iron salts and different base solutions. The synthesized nanocomposite was investigated with various characterization techniques such as FTIR, BET, SEM-EDX, TEM, XRD, and VSM. The obtained PCAC-IO adsorbent was used for Cr6+ ions and Mordant Violet 40 (MV40) dye removal. The adsorption mechanism of Cr6+ ions and MV40 dye on PCAC-IO was examined using several adsorption and kinetic isotherm models. Langmuir and Freundlich models were investigated using experimental data. Pseudo-first-order (PFO), Pseudo-second-order (PSO) and intraparticle diffusion models (IPDM) were applied to identify the adsorption mechanism. It has shown that the PSO kinetic model fits better with the experimental data obtained from PCAC-IO. This result can be interpreted as the adsorption of the adsorbate on the nanocomposite as chemical adsorption. The optimum conditions for maximum Cr6+ ions removal (96.88%) with PCAC-IO adsorbent occur at room temperature, 5 g L−1 adsorbent concentration, 100 mg L−1 initial pollutant concentration, pH 1 and at the end of 180 min, while maximum MV40 dye removal (99.76%), other conditions being the same, unlikely it occurred at pH 2.06 and after 45 min. The most suitable model for Cr6+ ions removal under the conditions of 1 L−1 g adsorbent concentration and 400 mg L−1 adsorbate concentration was Langmuir (Qmax = 151.52 mg g−1), while for MV40 removal it was Freundlich (Qmax = 303.03 mg g−1). We propose the use of activated carbon-supported iron oxide prepared from bio-waste material, especially from Pterocladia Capillacea red algae, as a promising adsorbent with high efficiency in the removal of Cr6+ ions and MV40 dye from aqueous media.

Direct Blue 71 Degradation in the Presence of ZVI and H2 O2 Advanced Fenton Process: Determination of Optimum Conditions and Kinetics

    Ertugay, Neşe; Acar, Filiz Nuran

This study investigated color and COD removal of azo dye Direct Blue 71 (DB71) by a Fenton-like process in zero-valent iron (Fe0 = ZVI). The UV–vis spectra of DB71 exhibit three main absorption bands – two in the UV region and one in the visible region. UV–vis spectra showed that the azo linkages in the molecule structure of the dyes were destroyed during the decolorization. The influence of various operational parameters such as pH, ZVI dosages, hydrogen peroxide (H2 O2) concentrations and temperature are studied to determine the optimum conditions for color and COD removal. pH is highly effective parameter of decolorization and COD destruction in this work. However, H2 O2 concentration and ZVI dosages were not only effective in the removal of COD for 100 mgL-1 initial DB71 concentration. Therefore, the optimum ZVI:H2 O2 ratio is based on determining the value of COD removal. Optimum conditions were accepted to be pH of 2.5, ZVI:H2 O2 ratio 4:1 and 20ºC temperature. The result indicated that 100% of decolorization efficiency was achieved within 20 min in the range of 150-400 mg/L initial DB71 concentrations by using optimal conditions. Residual COD values were 15.38, 22.35, 22.58, 27.04, 31.86 mg/L for 150, 200, 250, 300, 400 mg/L initial DB71 concentrations at the end of reaction time, respectively. Additionally, increasing the reaction temperature from 20 to 40ºC negatively affected the decolorization and degradation rate DB71. The experimental kinetic data are fitted very well the Behnajady–Modirshahla–Ghanbery model for color removal of DB71 dye.

Radiological characteristics of Self-Compacting Concretes incorporating fly ash, silica fume, and slag

    Bulut, H. Alperen; Şahin, Remzi

This article presents the results of a comprehensive study investigating the hypothesis that higher concentrations of natural radionuclides, that are harmful to human health, may be present in Self-Compacting Concretes (SCCs) due to its higher powder material content compared to conventional concretes. The fresh (slump-flow, T500 time, V-funnel) concrete and compressive strength of SCCs prepared by replacing Portland cement with fly ash (FA), silica fume (SF), and ground granulated blast furnace slag (GGBFS) in the respective range of 5%, 12.5%, and 20% were determined. The radionuclide activity concentration of all solid concrete components and SCCs were determined using the gamma spectrometry method. Radioactivity analyses including the calculation of the activity concentration index and annual effective dose equivalents were also performed. The findings showed that the specimens with the highest average compressive strength at the end of 120th day were, respectively, SF (54.2 MPa), FA (52.2 MPa) and GGBFS (46.1 MPa) added to the SCC. The obtained concentration of the Radium-226 value (41.1) of 20% UK with added SCC was 1.8 times higher than the control concrete (22.7) and 2 times higher than 20% SF added SCC (19.7). The highest Radium equivalent activity (Raeq) values were FA20 (89.52), GGBFS20 (72.05), control concrete (70.86) and SF20 (68.01). It was determined that the FA selected for the study exceeded the limit specified for structural material (3.38 > 1) and fell in the radiologically hazardous class. It has been proven that SF can be used as a radioactivity reducing material of concretes. The results revealed that the research hypothesis was confirmed in terms of FA.
