Rymbai, Heiplanmi; Ercisli, Sezai; Sulusoglu Durul, Melekber; Kilicgun, Hasan; Bayyigit, Ismail; Colak, Aysen Melda

Prunus nepalensis is an important wild edible fruit tree of the eastern Himalayas, India. The fruit is known as a rich source of bioactive ingredients, pigmentation, and a distinctive organoleptic feature; however, the information available is scattered and focused mainly on the content of compounds in an isolated manner. The bioactive substances and pigmentations of P. nepalensis, as well as their potential applications were therefore thoroughly explored. All the data and literature were collected and analyzed. Sohiong fruits, had a unique blend of high titratable acidity, pH, citric acids, ascorbic acid, and total soluble solids (TSS). The proximate analysis revealed a high total carbohydrate, reducing sugar, total sugar, glucose, fructose, sucrose, crude oil, crude fiber, and ash content of fruits. A considerable amount of macro and micro mineral and nutritional content, including N, P, K, Ca, Mg, Zn, S, Na, and Fe, was recorded. The pulp and peel pigmentation of fruits was mainly due to the accumulation of anthocyanin (293–341 mg/100 g), including carotenoids, β‑carotene, flavonoids, and flavanol. A high content of ferric reducing ability of plasma (FRAP), total tannin, reduced glutathione, and hydroxyl radical activity are evidence of high antioxidants. Advancement in the development of novel extraction technologies has also improved the recovery efficiency of anthocyanin from Sohiong fruits. Sohiong fruits had high levels of bioactive substances and pigments. These fruits can be potentially used in value addition, food processing, and pharmaceutical applications as dietary supplements and alternative sources of edible color.

Hydroclimatic drought trends and change point detection in the Yeşilirmak basin: a comprehensive evaluation using SPI, SPEI, DMI indices and ITA, SQMK, IPTA approaches

Öllükçü, Meva Nur; Katipoğlu, Okan Mert

Drought was defined as water scarcity resulting from below-normal precipitation in a specific region over an extended period. Analysis of droughts was of vital importance in terms of water resources planning and management, hydropower generation, irrigation planning, agricultural productivity, and reservoir planning. In this study, drought status was evaluated according to the Standard Precipitation Index (SPI), Standardized Precipitation Evapotranspiration Index (SPEI), and De Martonne Index (DMI) values calculated between 1979 and 2022 for seasonal and annual periods for Amasya, Çorum, Samsun, and Tokat meteorological stations located in the Yeşilırmak Basin, and station-based drought percentages were expressed. In addition, trend and change point analyses were conducted for each drought index according to Şen’s Innovative Trend Analysis (ITA), Sequential Mann-Kendall (SQMK), and Innovative Polygon Trend Analysis (IPTA) methods. The analysis identified the trends and onset years of droughts in the region, revealing that severe droughts were dominant at a 15% level. ITA results indicated a significant decreasing trend of 5–10% in spring, summer, autumn, and annual periods, alongside an increasing drought trend. SQMK analyses confirmed a general decreasing trend at the stations, while IPTA highlighted the dominance of increasing drought intensities in SPI, SPEI, and DMI trends. These findings underscored the need for policymakers to take proactive measures to mitigate drought risks in the Yeşilırmak Basin.

    Yangilar, Filiz; Erdaş, Zeynep Tuba

This study aims to evaluate the potential of Kavılca fiber and astaxanthin to enhance yogurts’ nutritional content and antioxidant capacity, thereby contributing to developing a novel food product with significant health benefits. In this regard, the effects of different concentrations (1%, 1.5%, and 2%) of buckwheat fiber and astaxanthin on the quality properties of yogurt during a 21-day storage period were investigated. Enriching yogurts with buckwheat fiber and astaxanthin improved the viability, viscosity, water-holding capacity, and antioxidant activity of yogurt bacteria. The results indicated that the presence of astaxanthin had a positive impact on radical scavenging activity in samples, with CKA3 showing the highest radical scavenging activity (99.46%) after a storage period of 21 days while also exhibiting minimum serum separation among groups CKA3. Additionally, color parameters were significantly influenced by the addition of buckwheat fiber and astaxanthin (p < 0.05). The addition of buckwheat fiber and astaxanthin also positively affected the textural properties of yogurt samples during the storage period, and the most preferred sample was CKA1, along with the control samples.

Effects of ultrasound application on sensory and textural characteristics of Turkish döner kebab with varying marination durations

    Varol, Emre; Kara, Hasan Hüseyin

One of the most popular and preferred meat dishes in traditional Turkish cuisine is the Döner kebab. It was planned to improve the sensory properties of Döner kebabs and shorten the marinating time in this study. In the study, Ağrı Yaprak Döner with geographical indication was selected as a Döner kebab sample. As part of the study, a control Döner kebab sample was marinated with traditional methods for 72 h. Furthermore, three Döner kebab samples were subjected to ultrasonication and vacuum for 30, 60, and 90 min to evaluate their sensory differences. To obtain data for this study, texture profile analysis (TPA) was performed on Döner kebab samples. Also, a sensory analysis was conducted with 15 semi-trained panellists to determine the appearance, colour, odour, flavour, texture, and overall acceptance of the Döner kebab. According to the results of the study, the 60-minute ultrasound processed Döner kebab (UPD60) sample received the highest scores in terms of appearance and odour, whereas the 90-minute ultrasound processed sample (UPD90) was most preferred for colour and texture. For flavour, both the control and UPD60 samples achieved the highest ratings, while the UPD90 sample also showed relatively high scores. In terms of overall acceptance, the UPD90 sample exhibited the most favourable evaluation. Overall, ultrasonication, particularly at 90 min, was found to enhance the sensory attributes of Döner kebab compared to the control sample. In ultrasonicated Döner samples compared to the control sample TPA significantly enhanced the hardness, chewiness, and gumminess properties (p < 0.05). Although springiness, cohesiveness and resilience properties showed improvement compared to the control sample, the difference was not statistically significant (p < 0.05). In accordance with the results of the sensory analysis and the texture profile analysis, ultrasonication is likely to significantly shorten the marinating time while improving the sensory properties of the Döner kebab, making it the preferred method.

Physiological and biochemical responses of wheat (Triticum aestivum L.) and barley (Hordeum vulgare L.) to combined exposure of Pharmaceuticals, personal care products (PPCPs), and artificial sweeteners (ASs)

    Elveren, Müjgan

In this study, pharmaceutical active ingredients (gemfibrozil, acetaminophen and ciprofloxacin) and artificial sweeteners (aspartame and sucralose) were combined and applied to wheat and barley plants. After 15 days of cultivation, a series of biochemical and physiological parameters were evaluated. These included electrolyte leakage, antioxidant enzyme activities such as superoxide dismutase (SOD), catalase (CAT), peroxidase (POX), chlorophyll levels, total phenolic content (TPC), Ferric Reducing Antioxidant Power (FRAP), total flavonoid content (TFC) and concentrations. The relationship between the control samples and the samples treated with pharmaceutical active ingredients and artificial sweeteners was statistically evaluated at the 95% confidence interval, and significant differences were found. The treatments markedly influenced plant physiology and antioxidant defense mechanisms. Electrolyte leakage increased to 795.71 ± 50.14 µS cm-1 in wheat, while catalase (CAT), peroxidase (POX), and superoxide dismutase (SOD) activities showed significant elevations, reaching 5797.5 ± 115.14, 95176.00 ± 3675.42, and 1766.11 ± 13.97 EU g−1, respectively. In contrast, chlorophyll a + b, carotenoids, total phenolic content (TPC), total flavonoid content (TFC), and FRAP values decreased substantially compared with controls. These findings demonstrate that mixtures of pharmaceuticals and artificial sweeteners can disrupt photosynthetic pigment stability, and impair antioxidant defense in wheat and barley, highlighting potential ecological and agricultural risks associated with emerging contaminant mixtures.

Effects of tumbling and ultrasound-assisted curing on quality of smoked beef tongue

    Şahin, Özlem; Vural, Halil

Smoked beef tongue (SBT) is a meat product obtained by cooking and smoking brined beef tongue. This study aimed to reduce the curing time of SBT and evaluate the effects of different curing methods on product quality during 90- day storage period. Ultrasound-assisted (UAC), intermittent ultrasound-assisted (IUC), tumbling (TAC), and vacuum tumbling (VTC) methods were applied, with traditional curing (TC) used as the control. According to ANOVA results, the highest redness (a*) value was observed in the TC group (14.98), but there was no significant difference compared to UAC, IUC, and VTC (p > 0.05). Curing methods had no significant effect on sensory properties (p > 0.05). The highest salt content was found in TC (4.23%), while the lowest was in IUC (1.61%), resulting in a 41–62% reduction depending on the method (p < 0.05). The highest water activity (0.960) and water-holding capacity (0.46) were observed in IUC. Weight yield ranged from 60.73% (VTC) to 65.77% (TC). The new methods also resulted in higher levels of sulfur compounds and aromatic hydrocarbons, while TC had higher levels of Maillard reaction products such as furans, pyrazines, pyridines, phenolics, ketones, and acids. Curing time was reduced from 8 days to 6–10 h. Overall, the novel curing methods effectively reduced curing time while maintaining the technological, chemical, and sensory quality of SBT. Implementing these methods in industrial production could enhance both product quality and production efficiency.

Aflatoxin B1 levels, dietary exposure and cancer risk assessment in sesame and nut-based foods in Türkiye

Aydemir Atasever, Meryem; Güler İnce, Mukaddes Beyza; Alkan Polat, Betül; Özlü, Hayrunnisa; Atasever, Mustafa

Aflatoxin B1 (AFB1), a highly toxic mycotoxin commonly found in oilseeds and nuts, poses serious public health and economic risks. Türkiye's climatic conditions are conducive to AFB1 contamination, particularly in sesame- and nut-based foods. This study investigated the presence of AFB1 in 100 widely consumed samples of tahini, tahini halva, hazelnut paste, and peanut paste. AFB1 was detected in 67% of the samples, with exceedances of the European Commission (EC) limit (2 µg/kg) notably high in tahini halva (80%) and peanut paste (60%); in contrast none of the hazelnut paste samples surpassed the legal threshold. The findings indicated that no samples of hazelnut paste exceeded the legal limits set by the EC. However, 4 tahini (13.33%), 24 tahini halva (80%), and 12 peanut paste (60%) samples exceeded the EC limits. Dietary exposure estimates were calculated based on lower bound (LB), middle bound (MB), and upper bound (UB) contamination scenarios. Margin of exposure (MOE) values for tahini halva were consistently below the safety threshold of 10,000, suggesting a possible health concern. The estimated annual incidence of hepatocellular carcinoma (HCC) due to AFB1 exposure ranged from 0.000888 to 0.00219 cases per 100,000 adults, remaining below European Food Safety Authority’s (EFSA) reference risk levels. These findings underscore the need for targeted surveillance and stricter regulatory controls on sesame-based products, particularly tahini halva, within national food safety frameworks.

Objectives: This study aimed to evaluate the effects of high-protein oral nutritional supplements (ONS) on nutritional status, physical function, and quality of life in older gastric cancer patients undergoing neoadjuvant chemotherapy (NAC). Methods: A prospective, randomized controlled trial was conducted between February 2023 and February 2024, including 46 patients aged 65 or older with newly diagnosed, locally advanced gastric cancer. Participants were randomized into two groups: an intervention group receiving high-protein ONS in addition to standard nutrition care, and a control group receiving only standard nutrition care. Nutritional status was assessed using the Mini Nutritional Assessment (MNA), physical function was evaluated through handgrip strength, Activities of Daily Living (ADL), and Instrumental Activities of Daily Living (IADL) scales, and health-related quality of life was measured using the EORTC QLQ-C30. Bioelectrical impedance was used to analyze body composition. Results: Among the 46 patients (23 in each group), baseline characteristics were similar between the groups (p > 0.05). The ONS group showed significantly higher energy and protein intake than the control group (p < 0.05). MNA scores improved significantly in the ONS group after 8 weeks (p < 0.001), with a reduction in malnutrition risk to 4.3%, compared to 17.4% in the control group (p = 0.003). ADL and IADL scores remained stable in both groups, and both groups reduced functions and increased symptoms of HRQL over 8 weeks. Emotional functioning scores significantly declined in both groups over the 8-week period (ONS group: from 91.7 [16.67] to 83.3 [8.33], p = 0.001; non-ONS group: from 91.7 [8.33] to 83.3 [16.67], p = 0.011). Fatigue levels also increased markedly in both groups (ONS: from 11.1 [11.11] to 49.3 ± 17.02; non-ONS: from 22.2 [11.11] to 44.4 [22.22], p < 0.001). Additionally, constipation symptoms worsened significantly in the non-ONS group by week 8 (p = 0.008). Conclusions: High-protein ONS improved nutritional status and reduced malnutrition risk in older gastric cancer patients undergoing NAC. Further research is needed to assess the long-term effects of ONS on physical function and quality of life. Trial registration: Registered under ClinicalTrials.gov Identifier no. NCT06645912.

Agriculture is a crucial factor in improving the country economic growth. With the massive impact of environment variation, supplying and measuring the quality of water for irrigation usage is a crucial task for water resource management authority. The demand for good quality water for both drinking and irrigation uses is increasing day by day in recent years. The main aim of the present study is to identify the suitability of surface water for irrigation uses in the Man River basin of Maharashtra, India using advanced techniques. These region first time is used such kind of models i.e. boosted tree, AdaBoost, decision tree, extremely randomized tree model, and feed-forward neural network (deep learning) models, and these models are better to analyze and understand the groundwater quality datasets in the saline area. The prediction results are evaluated with the use of different performance metrics, mean absolute error (MAE), mean absolute relative error (MARE), Nash Sutcliffe efficiency (NSE), root mean squared error (RMSE), and coefficient of determination (R2). The study identified that the boosted tree model is more appropriate for the SAR prediction value, this model with high accuracy compared with other models. The result of this study shows that boosted tree model is very suitable for prediction of SAR and also provided the accurate information for agriculture purposes. In the first scenario, the boosted tree model shows lower value of mean squared error (MSE) of 0.26 and higher R2 of 0.88, the second scenario shows lower value of MSE of 0.11 and higher value of R2 of 0.91. Overall, in both the scenarios, the result of boosted tree model is more favorable for SAR% prediction. This work shows that machine and deep learning models can improve and better prediction of the groundwater quality in the study area. It is essential to understand the water quality and improve the sustainable agriculture system and development. These advanced modeling methods help to stakeholders make better water management and irrigation decisions, boosting agricultural sustainability and productivity.

Karatas, Tayfun; Sokmen, Teoman Ozgur; Gur, Sultan Tuna Akgol

Pumpkin seeds possess antioxidant, anthelmintic, cytoprotective, antidepressant, antidiabetic, and antitumor properties. This study aimed to evaluate the effects of pumpkin seed extract (PSE) on the growth performance, blood biochemistry, oxidative stress, antioxidant status, immunity, and digestive enzyme activity in common carp (Cyprinus carpio). Eighty carp fingerlings (average weight: ∼13 g) were distributed into aquaria (80 × 29 × 42 cm; water volume: 100 L) with 20 fish per aquarium. The experimental design included one control group (0 % PSE) and three treatment groups supplemented with 1 %, 2 %, or 4 % PSE, each with three replicates. The fish were fed their respective diets for 70 days. The inclusion of 1 %, 2 %, and 4 % PSE significantly influenced all measured parameters. The specific growth rate (SGR), weight gain (WG), and feed conversion ratio (FCR) improved with increasing dietary PSE levels. Compared to the control group, PSE supplementation at all doses markedly elevated biomarkers, such as total protein, trypsin, amylase, lipase, superoxide dismutase (SOD), catalase (CAT), lysozyme, total immunoglobulin (IG), and white blood cell (WBC) counts. On the other hand, significant reductions were observed in glucose, aspartate aminotransferase (AST), alanine aminotransferase (ALT), total cholesterol, triglycerides, and malondialdehyde (MDA) levels. The 4 % PSE treatment exhibited the most pronounced effects across all parameters. In sum, dietary supplementation with 4 % PSE effectively enhanced stress resilience, growth performance, immune response, antioxidant capacity, and digestive enzyme activity in common carp fingerlings compared to lower PSE concentrations and the untreated control group.

Production of Functional Kombucha Enhanced with Mormix, Mulberry Powder and Different Concentrations of Whey; [Farklı Konsantrasyonlarda Peynir Altı Suyu, Mormix ve Dut Tozu ile Zenginleştirilen Fonksiyonel Kombucha Üretimi]

    Bebek, Esra; Yangilar, Filiz

In this study, the fortified fermented beverages with Kombucha culture (SCOBY) and different concentrations of whey (25%, 50%, 75%) by using mulberry powder to give natural sweetness with mormix rich in bioactive components during fermentation (1st, 5th, 7th, 9th, 11th and 13th days) microbiological, physicochemical and sensory properties were planned. This effort was to develop an innovative, functional, and immune-boosting product by combining Mormix, which is rich in bioactive compounds, and nutritionally valuable whey in the production of Kombucha tea. The lowest acetic acid bacteria count (6.87 log10 cfu mL-1) was found in the control sample, and the highest (8.07 log10 cfu mL-1) was found in the sample produced with green tea+75% whey+mormix+mulberry powder (KMP3). Lactobacillus spp. and Lactococcus spp. counts were determined to be the highest in the KMP3 sample. The effect of the samples on the mold counts developed in Kombucha beverages was statistically significant (p<0.01). Using green tea and different raw materials for Kombucha fermentation caused changes in dry matter, titration acidity, and pH values. The viscosity results were very significant during fermentation and adding different concentrations of whey and mormix+mulberry powder (p<0.01). It was determined that the L*, a*, b*, C, α°, and ∆E* color parameters of Kombucha enriched with whey and mormix+mulberry powder changed during fermentation. In fermented beverage samples made with Kombucha culture, an increase was observed in total phenolic content (981.33-1515.30 mg GAE g-1) and antioxidant capacity (DPPH 59.03-94.29%) during fermentation depending on the raw materials added. The sensory analysis showed that the most preferred sample was green tea+25% whey+mormix+mulberry powder (KMP1). Increasing the fermentation time caused an increase in acidity, and on the 13th day, KMP2 and KMP3 were the samples with the lowest taste scores. It has been obtained from the thesis findings that Kombucha can be evaluated as a new fermented beverage because raw materials such as whey and mormix used in its production provide strong antioxidant properties.

Keskin, Nurhan; Karakus, Sinem; Hatterman-Valenti, Harlene; Kaya, Ozkan; Cavusoglu, Seyda; Tekin, Onur; Kunter, Birhan; Keskin, Sıddık; Kaya, Ahmet Çağlar; Karadogan, Birol

Understanding the effects of edible coatings on postharvest quality and shelf life of ‘Karaerik’ grapes is crucial for improving storage outcomes and reducing losses. However, limited information exists regarding the effectiveness of different coating materials on this regionally significant variety. In this study, ‘Karaerik’ grapes were treated with carboxymethyl cellulose (CMC) and locust bean gum (KB) coatings and stored under cold conditions (0 ± 0.5 °C, 90–95% relative humidity) for 0, 25, 45, and 60 days. Storage duration and coating treatments significantly affected most physical, physiological, and biochemical parameters. During storage, grape weight loss progressively increased, reaching 9.60% in the control by day 60. Coatings slightly reduced this loss, with KB showing the lowest (5.11%) compared to the control (5.69%). Respiration initially declined but surged again at day 60, especially in the control (96.4 μmol CO2/kg·hour), while coatings helped mitigate this rise. Ethylene release remained unchanged. A slight pH decline (~4.6%) was observed in the control, while KB-treated grapes maintained higher pH and lower acidity. Soluble solids remained stable across treatments. Color changed notably during storage: a* nearly doubled (more redness), b* increased (less blue), and chroma (C*) declined by ~25%, especially in uncoated grapes. Total sugar dropped by ~43% in KB-treated grapes, with the control retaining the most. Tartaric acid decreased by ~55%, notably in KB samples. Antioxidant activity and total phenolics declined significantly (~66%) in the control. CMC coating better-preserved antioxidant capacity, while the control showed the highest phenolic levels overall. Ferulic, gallic, and chlorogenic acids increased toward the end of storage, particularly in coated grapes. In contrast, rutin and vanillic acid peaked mid-storage and were better preserved in the control. The heatmap showed significant metabolite changes in fruit samples across 0D, 25D, 45D, and 60D storage periods under CMC, CNT, and KB treatments, with distinct clustering patterns revealing treatment-specific biochemical responses. The correlation matrix revealed strong positive relationships (r > 0.70) between total sugar, glucose, and fructose levels, while ethylene showed significant negative correlations (−0.65 to −0.85) with maturity index, pH, and total soluble solids, indicating interconnected metabolic pathways during fruit ripening and storage. We conclude that edible coating selection significantly influences grape biochemical stability during cold storage, with CMC emerging as a superior choice for maintaining certain quality parameters.

Diabetes, the most prevalent metabolic disorder, is closely linked to Alzheimer's disease, with DM patients showing a two-fold increased risk of developing AD. Bilberry (Vaccinium myrtillus L.) is a prominent wild berry, widely used in juice and food production. This study aimed to evaluate and compare the phytochemical composition and biological activities of different parts of wild V. myrtillus plants, including branches, leaves, and fruits. Using LC–MS/MS, the study quantifies total phenolics, flavonoids, and tannins in each part. Biological activities are assessed through antioxidant activity (ABTS and DPPH assays), anticholinesterase (neuroprotective potential), and antidiabetic effects. The experiments revealed that the Leaf of Yer Ligarba (YLL) extract had the highest values in terms of total phenolic content, total flavonoid content, and total tannin content. Among the extracts, the highest radical scavenging effect was observed with YLL at 86.67% against DPPH. The leaf extracts, Leaf of Dal Ligarba (DLL) and YLL, demonstrated the highest scavenging effects, with inhibition rates of 99.37% and 99.37%, respectively. At one of the common concentrations, 100 μg/mL, acarbose showed 13.12% inhibition, while the Branch of Dal Ligarba (DLB) extract exhibited 98.67% α-glucosidase enzyme inhibition. The highest acetylcholinesterase and butyrylcholinesterase enzyme inhibition activities were observed in the Branch of Yer Ligarba (YLB; 27.08%) and the Fruit of Dal Ligarba (DLF; 16%), respectively. Chlorogenic acid was the most abundant phenolic compound, particularly in the DLL 58,569.80 ng/mL. This study highlighted the significant phytochemical content and biological activities of wild bilberry extracts, demonstrating their potential for managing diabetes and neurodegenerative diseases, particularly Alzheimer's.

Quinoa is a versatile, nutrient-dense, gluten-free pseudocereal, increasingly recognized for its potential health benefits, particularly in managing diabetes mellitus and Alzheimer's disease—two conditions with growing links. Recent research on 14 quinoa genotypes explored fatty oil composition and bioactive potential of quinoa extracts. Linoleic acid was predominant fatty acid (46.60%–56.33%), whereas alanine was the most concentrated amino acid across all active extracts (192.4887–1578.0355 nmol/mL). French Vanilla hexane extract exhibited the strongest α-glucosidase inhibition (75.71%), with Santa Ana hexane extract showing the highest α-amylase inhibition (28.58%). Additionally, Titicaca hexane extract displayed notable acetylcholinesterase inhibition (22.22%), and Moqu Arochilla methanol extract had the most potent butyrylcholinesterase inhibition (47.20%). Antioxidant assays revealed that Salcedo and French Vanilla extracts had exceptional 1,1-diphenyl-2-picrylhydrazyl (DPPH) radical scavenging activity, with positive correlations found between total phenolic content and antioxidant activity (DPPH, β-carotene, FRAP). These findings emphasize quinoa's potential as a functional food, offering significant benefits for disease management.

Forage peas are widely utilized as a source of animal feed, and their fresh shoots, fruits, and pods exhibit considerable potential for human consumption. This study aimed to assess the genetic diversity and population structure of 61 Turkish forage pea genotypes using inter-primer binding site (iPBS) retrotransposon markers. A total of 37 highly polymorphic iPBS primers were employed, producing an average of 69 bands per primer and a cumulative total of 2529 bands. The average polymorphism information content (PIC) was determined to be 0.345. The results revealed significant genetic diversity within the germplasm, as indicated by diversity indices such as the average effective number of alleles (0.704) and a Shannon’s information index (0.299). Molecular analysis of variance (AMOVA) indicated that 74% of the total genetic variation occurred within populations. Population structure analysis identified four distinct subpopulations among the genotypes, with expected heterozygosity values ranging from 0.2404 in the fourth subpopulation to 0.3094 in the second subpopulation, with an overall average of 0.2702. This study represents the first comprehensive investigation of genetic diversity and population structure in forage pea germplasm using the iPBS retrotransposon marker system. The findings highlight the effectiveness of iPBS markers in genetic diversity research and underscore their potential for broader application in the characterization of diverse forage pea collections across different geographic regions.

Timing Matters, Not Just the Treatment: Phenological-Stage-Specific Effects of Seaweed and Ethanol Applications on Postharvest Quality of ‘Tarsus Beyazı’ Grapes

Tarım, Güzin; Karakus, Sinem; Keskin, Nurhan; Hatterman-Valenti, Harlene; Kaya, Ozkan

In the context of increasing consumer demand for high-quality, residue-free fruits and the growing emphasis on sustainable postharvest technologies, identifying effective, eco-friendly treatments to maintain grape quality during storage has become a critical focus in modern viticulture. Over the course of this study, we examined the influence of seaweed extract (derived from Ascophyllum nodosum) and ethanol-based postharvest treatments on the postharvest quality of the ‘Tarsus Beyazı’ grape. The seaweed extract was applied at six specific phenological stages according to the BBCH scale: BBCH 13 (3rd–4th leaf stage, 0.40%), BBCH 60 (first flower sheath opening, 0.50%), BBCH 71 (fruit set, 0.50%), BBCH 75 (chickpea-sized berries, 0.50%), BBCH 81 (start of ripening, 0.60%), and BBCH 89 (harvest maturity, 0.60%). After harvest, grape clusters were subjected to four different postharvest treatments: untreated control, control + ethanol (20% ethanol immersion for 10 s), seaweed extract alone (preharvest applications only), and seaweed extract + ethanol (combining both preharvest and postharvest treatments). Grapes were stored at 0–1 °C and 90–95% RH for three weeks, followed by a shelf-life evaluation period of three days at 20 °C and 60–65% RH. The findings revealed that seaweed treatments, especially when applied during cluster formation and berry development, effectively mitigated physiological deterioration, preserving stem turgidity and enhancing berry firmness. In contrast, ethanol showed variable responses, occasionally exerting negative effects, with only marginal benefits observed when applied at optimal developmental stages. Both the type and timing of application emerged as critical determinants of key quality attributes such as weight loss, decay incidence, and must properties (TSS, pH, TA). Correlation and heat map analyses indicated the interrelationships among these parameters and the differential impacts of treatments. These results suggest that phenological-stage-specific seaweed applications hold significant potential as a sustainable strategy to extend the storage life and maintain the market quality of ‘Tarsus Beyazı’ grapes.

Katılımcıların %68,1’i alkol kullanmadığını belirtmiştir.

Bayata, Halim Ferit; Akar, Alper; Akar, Özlem
