This study aims to evaluate the contents of fruit juices and similar beverages in the Turkish market and to examine them in line with the Sustainable Development Goals. Within the scope of the study, the researchers examined the label information of 187 fruit juices and similar beverages from 26 different brands in four different product types. It was determined that all fruit nectars (100%) and almost all fruit and flavored beverages contain added sugar (92.8% for fruit beverages and 70.0% for flavored beverages). It was further detected that 17.5% of fruit nectars and 20.3% of fruit beverages contain sweeteners. Moreover, more than 100% of the daily sodium requirement is met by consuming 100 ml of fruit juice, nectar, or beverages. It was determined that orange and apple juices, apricot, peach, and cherry fruit nectars, and peach, sour cherry, and orange fruit beverages contain more sugar than freshly squeezed fruit juices (p<0.05). The high-fructose syrup manufacturing industry produces large volumes of waste liquid containing various waste carbohydrates, which has a significant environmental impact. Greenhouse gas emission sources are also released to the environment in sugar production processes. On the other hand, it was determined that most of the products examined were packaged in Tetra Pak® packaging. More sustainable product supply chains are those that optimize the use of materials, water, and energy throughout their lifecycle while minimizing waste from products and used packaging. In light of the data obtained from this study, it would be useful for the fruit juice industry to make regulations to ensure sustainable production and consumption patterns in order to ensure a healthy and quality life at all ages.

Aka, Salih
Blockchain is a digital innovative technology that is decentralized, open to the use of all stakeholders, does not allow data manipulation, and has many more features. Blockchain, which has the potential to solve problems in food safety, is attracting more and more attention from researchers in this field. In this study, a conceptual model for the integration of blockchain and food waste management is proposed. The combination of blockchain and food waste management has economic, social, and environmental dimensions that will serve the purpose of reducing food waste. However, some blockchain barriers make it difficult to integrate with food waste management. Blockchain barriers that affect the success of this integration are examined with the BEST-Worst Method (BWM). As a result of the analysis, infrastructure setup and adaptation challenges stand out as the most important barrier. The study would be a starting point for practitioners working on food waste management and the blockchain system, and government officials planning regulations in this area.

Katipoğlu, Okan Mert
Hotter and drier weather conditions due to climate change negatively affect water resources and agricultural production. For this reason, it is vital to analyze the change in potential evapotranspiration (PET) values, which is one of the most important parameters related to plant growth and agricultural irrigation planning. This study analyses the trends and changes in monthly and annual PET values between 1965 and 2018 at Erzincan, Bayburt and Gümüşhane meteorological stations in Turkey. For this purpose, monotonic trends in PET values were determined by Spearman’s rho (SR), Mann–Kendall (MK), Şen slope (SS), and innovative trend analysis (ITA) tests and change points were analyzed with the sequential MK (SQMK) test. The Hargreaves equation was used to calculate the PET values. As a result of the study, according to MK and SR tests, while increasing trends at 95% and 99% significance levels were dominant at Erzincan and Bayburt stations, no statistically significant trends were found at Gümüşhane station except in February. ITA generally detected more than 5% increasing trends in PET data’s low, medium, and high values. According to ITA slope analysis, there are significant increase trends in PET values at all periods, trend 1% significance level. According to the SQMK test, it was revealed that the trend started in PET values, especially in 1995, 2005, and 2010. The findings emphasized the importance of taking measures against decreased agricultural production and managing water resources effectively.

Tulipa (Liliaceae) is cultivated as an ornamental plant worldwide and its wild representatives hold valuable genetic resources for breeders are facing the effects of climate change in Central Asia like all of wild plant species. Therefore, the effects of climate change on two Central Asian species (T. korolkowii Regel and T. lehmanniana Mercklin) plus the current suitable habitat for two endemics (T. intermedia Tojibaev and J.J. de Groot, T. scharipovii Tojibaev) to Uzbekistan and one endemic (T. ferganica Vved.) to Ferghana Valley were investigated in the study. Because endemic species are valuable for any territory, we cannot trust a limited number of variables that are commonly used for modeling distribution of species. For that, 41 bioclimatic and ecologic variables were utilized in the investigation. The results showed that T. lehmanniana is a species most affected by climate change, while T. korolkowii appears low necessity for its conservation action. Tulipa ferganica mainly grows in some protected areas of Kyrgyzstan which cannot provide protection against climate change and this may help to mitigate its extinction caused by human-driven disturbance. Thus, the conservation implications of these results are discussed.

RDL Kalıcı Kaydıİncele - ArticleAçık Erişim2023Using Grapefruit and Tomato Waste in O/W Type Chicken Meat Emulsion
Akşit, Zeynep; Gençcelep, Hüseyin
Utilizing food waste is crucial for several reasons, including preserving valuable ingredients, lowering formulation costs, taking advantage of its functional properties, and preserving the environment. Grapefruit waste (GW) and Tomato waste (TW) are used in oil-in-water (O/W) emulsion formulation to investigate their contributions to emulsion stability, textural parameters, and steady shear rheological properties of the model system. O/W emulsions were formed with four different concentrations (0.5%, 1%, 2%, and 3%) of GW and TW, and chicken breast meat and corn oil were the main components of emulsions. Both food wastes increased emulsion stability (ES) in most concentrations compared to the control. The best ES of 86.35 was observed at a concentration of 1% TW emulsion. Emulsions were subjected to texture profile analysis as both row and heat-treated. Heat-treated emulsions had higher hardness values (241.2-518.6 g) than the row emulsions (149.7-247.2 g). All emulsions were found to have pseudoplastic character and exhibit shear thinning behavior. All emulsion samples' apparent viscosity fit well with the Ostwald-de-Waele model (R2>0.9). Food waste samples used in the study improved the chicken-type O/W emulsion properties in terms of emulsion stability and textural properties.

The addition of poultry and other meats to products made from 100% beef is prohibited in Türkiye. In addition, in Türkiye, where the majority of the population is Muslim, the use of pork and single-hoofed meat is a matter of concern due to religious reasons. This study utilized a sensitive and specific real-time polymerase chain reaction (PCR) method to identify the different meat species in meat products marketed as 100% beef and sold in the eastern Türkiye provinces of Erzurum, Erzincan, Kars, Aǧri, and Bingöl. The real-time PCR method was used to investigate the presence of DNA specific to six animal species (chicken, turkey, pork, horse, donkey, and camel). The analysis revealed no traces of horse, donkey, camel, or pork meat in any of the 100 samples of Turkish fermented sausage (sucuk), salami, and sausage. Contrary to the product labels claiming 100% beef content, poultry DNA residues were identified in a salami sample from Erzincan, while turkey DNA residues were found in sucuk samples from both Aǧri and Kars. The study's findings reveal that contrary to label information, various types of meat can be present in meat products sold by both trademarked and local butchers. Consequently, this paper emphasizes the need for routine checks on market-sold products to ensure they comply with legislation and avoid consumer deception. Furthermore, the Real-Time PCR method, with its rapid results and high sensitivity, is deemed beneficial for food safety, consumer rights, and the prevention of unfair competition.

It is very difficult to distinguish between non-fresh fish and fresh fish mixed in the fish stalls. In addition to traditional methods used to determine meat freshness, significant success has been achieved in studies on fresh fish detection with artificial intelligence techniques. In this study, two different types of fish (anchovy and horse mackerel) used to determine fish freshness with convolutional neural networks, one of the artificial intelligence techniques. The images of fresh fish were taken, images of non-fresh fish were taken and two new datasets (Dataset1: Anchovy, Dataset2: Horse mackerel) were created. A novel hybrid model structure has been proposed to determine fish freshness using fish eye and gill regions on these two datasets. In the proposed model, Yolo-v5 and Inception-ResNet-v2 and Xception model structures are used through transfer learning. Whether the fish is fresh in both of the Yolo-v5 + Inception- ResNet-v2 (Dataset1: 97.67%, Dataset2: 96.0%) and Yolo-v5 + Xception (Dataset1: 88.00%, Dataset2: 94.67%) hybrid models created using these model structures has been successfully detected. Thanks to the model we have proposed, it will make an important contribution to the studies that will be conducted in the freshness studies of fish using different storage days and the estimation of fish size.

Sunar, Serap
In the present study, amaranth, which is a very important azo dye used in food, drug, paper, cosmetic and textile industries, was evaluated for its genotoxic potential by the plant model organism Triticum aestivum (wheat). The impacts of salicylic acid on genotoxic damage, and the alterations in DNA methylation due to amaranth stress in Triticum aestivum L. were also investigated. The marker techniques of Inter-retrotransposon amplified polymorphisms (IRAP) and Inter-Simple Sequence Repeats (ISSR) were used to identify genotoxic damage. Amaranth at four different doses (50, 100, 250, 500 mg/l) and salicylic acid at two different doses (0.50 mM and 0.75 mM) were used. Amaranth at all doses caused genotoxic damage and reduced Genomic template stability (GTS %). It was found that there was an increase in genomic stability due to doses of salicylic acid in combination with Amaranth.
